How can I write a zombie book?

It sounds great. My only advice is to try and throw something unique in there, since a lot of zombie stories have the same basic plot line. And don't skimp out on the details. Don't be afraid to really get into the gore; if people are reading a story about zombies, they should know what to expect. Good luck!
